CHILI RECIPE
Here’s the chili thang I promised yesterday. I was going to post it after the concert last night, but there were many beers and… anyway.
I LOVE this because it’s seriously one of the healthiest things I make. I use all organic items (in AK they are the same price as regular food, so it makes it easier for J and I to buy better food) and it’s got turkey instead of beef.
INGREDIENTS
5 cloves of garlic
1 whole onion
1 green pepper
1 lb ground turkey
2 tbsp. chili powder
1 tbsp. cumin
1 12 oz. beer (I prefer Landshark or one of our local ambers, but seriously any light-amber colored beer is delish)
I can kidney beans (drain and rinsed)
I can diced tomatoes (I prefer Muer Glen, they have bigger pieces and just taste the best)
1 can tomato paste
WHAT TO DO
Cook up the garlic, onion, and green pepper in some EVOO until the onion is translucent. Throw in your turkey and cook until browned. (Here is where I salt and pepper and throw in any additional spices besides those listed but it’s really up to you) Add the chili powder and cumin. Stir in your beer and cook for 10 minutes. Toss in the beans and tomatoes, cover and cook on low for at least 1 hour. I sometimes go for 90 minutes or longer depending on how much time I have. Add your tomato paste and simmer uncovered for at least 20 minutes. Top with whatever you please, I like fresh red onion and cheddar cheese. Also, feel free to add anything you want to amp up the chili. I’ve used jalepeno before and hot sauce.
I got this recipe forever ago from Cosmo magazine… I know! But it looked awesome on the page and I was like WTH and now it’s one of J’s favorite things I make. ENJOY!
